One of the few soups you can prepare for dessert.

3 eggs, separated

3/4 cup sugar

5 cups milk

1tablespoon Vanilla Sugar , page 136

Pinch of salt

Ground cinnamon

In a medium bowl , beat egg whites until stiff but not dry. Fold in 1/4 cup sugar .In a medium saucepan , combine milk and vanilla sugar. Bring to a boil over medium heat. Add 1 teaspoon egg-white mixture. When milk mixture comes to a boil again and egg white becomes like a dumpling ,add another teaspoon egg-mixture. Wait several seconds . Gently stir, turning egg-white dumplings over. Repeat with remaining egg-white mixture. When dumplings are cooked , remove dumplings with a slotted spoon ; place equal amounts in 4 serving bowls. Remove milk mixture from heat . In a medium bowl , beat egg yolks and 1/2 cup sugar with an electric mixer, until pale and creamy , 5 to 7 minutes . Fold into milk mixture ; simmer over low heat 5 minutes , stirring frequently . Add salt . Ladle milk mixture over dumplings . Lightly sprinkle with cinnamon . Serve hot or chilled . Makes 4 servings.
