First Soak the chickpeas overnight. Then cook for about 30 minutes in salted water. Drain off and leave to cool. Second Cheese, onions and peppers cut into small cubes. Mix together with chickpeas. 3rd Season with olive oil, balsamic vinegar and pepper and thyme. 4th Serve on lettuce.
