przygotowanie Bolognese sauce: olive oil, more pot, fry the finely chopped onion, add chopped into small cubes celery and grated carrot (vegetables can also crush in food processor). Fry, then move to the side and space to put cut into small cubes of bacon. Brown it and mix with vegetables. Move everything to the side of the pot and put the meat in batches: put 1/3 of the meat and fry stirring every minute, until it changes color from red to brown. Then mix with vegetables and bacon, move to the side, repeat with the rest of the meat.Pour in the wine and cook over medium heat for 3 minutes, add the hot broth mixed with tomato concentrate, bring to the boil, add the tomato passata. Season with salt and pepper. Cover and cook on low heat for 2 hours (can be longer). From time to time, stir.Béchamel Sauce: In medium saucepan heat the butter well, add the flour and cook for about 2 minutes, stirring. Gradually pour the milk with vigorous stirring constantly until the sauce is smooth. Simmer for a few minutes. Set aside from the heat, season with salt and nutmeg.Lasagne Bolognese: Preheat the oven to 175 degrees C (heating up and down without convection). Prepare a refractory mold measuring approximately 19 x 27 cm. Smear it with butter, pour and spread approx. 100 ml Béchamel sauce, place the first layer of lasagne sheets of (may overlap slightly).For lobes lasagna bolognese sauce spread layer, then pour the béchamel sauce and sprinkle with Parmesan cheese. Repeat another 4-fold. So complex lasagna put into the oven and bake for 45 minutes (cooking time in half cover with aluminum foil).
