W pracy podjęto próbę zbadania krzewu, od którego prawdopodobnie pochodzi nazwa miasta Tarnowa. Celem pracy była analiza fizykochemiczna śliwy tarniny. Badaniom poddano zarówno suszone kwiaty jak i owoce. Ponadto porównawczo zbadano herbatkę „Tarninówkę” otrzymaną m.in. z owoców tarniny. Oznaczono witaminę C w analizowanym materiale metodami: jodometryczną, Tillmansa oraz spektrofotometryczną. Podjęto także próbę oznaczenia jej zawartości za pomocą spektroskopii absorpcyjnej w podczerwieni.
W kolejnym etapie oznaczona w kwiatach, owocach i herbatce także antocyjany, garbniki
i szczawiany. Zawartość wszystkich analizowanych czynników jest niezwykle istotna dla zdrowia konsumenta.

In addition, comparatively examined tea "sloe gin" received, among others, with sloes. Marked vitamin C in the analyzed material methods iodometry, Tillmans and spectrophotometry. Attempt was also made indication of its contents by means of infrared absorption spectroscopy. In the next stage marked in flowers, fruits and tea as anthocyanins, tannins and oxalates. The contents of all analyzed factors is extremely important for the health of the consumer .
